Oaty Loaf with Smashed Avocado and Eggs

Method
  1. Boil a large pot of water for the eggs.
  2. Mash the avocado in a bowl and crumble in the goats cheese. Mix gently.
  3. Once the water looks like it's about to boil, turn down the heat and add the eggs gently one by one into the centre of the pot. They should take no longer than 3/4 minutes.
  4. Once everything is ready, assemble the dish- top the Oaty Loaf slices with the avocado mix, and then top with a poached egg. Season with some sea salt and pepper anda drizzle of pesto.
