A vibrant, Mediterranean-style open-faced sandwich using hearty oat bread as the perfect canvas for rich, herbaceous flavors.

Chef’s Note: For the best flavor profile, prepare the tomato relish about 20 minutes before serving to allow the juices to marinate, but always fold gently at the final second to maintain that crystal-clear, vibrant red color.

2 Slices BFree Rustic Oat Loaf (Cut in half)

Artichoke Spread: 1 jar Artichoke hearts, 5 cloves Garlic, Olive Oil, Salt, Pepper, and Fresh Thyme.

Tomato Relish: 4 Vine-ripe Tomatoes, fresh Basil, Olive Oil, Salt, and Pepper.

Basil Pesto: Homemade preferred (Basil, Pine Nuts, Garlic, Parmesan, Olive Oil).

Garnish: Fresh Basil (Chiffonade cut).

Artichoke Spread: In a food processor, pulse the artichoke hearts, garlic, olive oil, salt, pepper, and thyme. Chef’s Tip: Pulse just until combined; you want a slightly chunky, rustic texture rather than a smooth purée.

Tomato Relish: Small-dice the tomatoes and finely chop the basil. In a large bowl, combine with olive oil, salt, and pepper. Use a gentle folding technique to mix; over-mixing can break down the tomatoes and make the relish look cloudy.

Base & Bake: Spread a healthy layer of the artichoke spread and basil pesto onto the halved slices of Rustic Oat Loaf. Place in the oven or toaster oven at 400°F (205°C) for 7–10 minutes until the bread is toasted and the spreads are warm and fragrant.

Layer: Remove from the oven and top each slice with a generous spoonful of the fresh tomato relish.

Garnish: Finish with a sprinkle of fresh chiffonade basil for a bright, aromatic punch.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
