Quick Pickled Onions

1 large red onion, thinly sliced

1 cup water

2/3 cup distilled white vinegar

1 teaspoon salt

Pinch of black pepper (optional)

Pinch of dried dill (optional)
Mashed Avocado

1/2 ripe avocado
-
1/2 teaspoon salt
-
1/2 teaspoon black pepper

1 teaspoon lemon juice
-
1 teaspoon chili flakes

2 slices BFree oat bread, toasted
Prepare the pickling liquid: Place thinly sliced red onion in a microwave-safe dish. Add water, vinegar, salt, and if using, pepper and dill. Stir briefly to combine.
Microwave and rest: Microwave on high for 1-2 minutes until the onions have softened slightly. Remove and let sit at room temperature to cool and pickle – the longer they sit, the more vibrant and tangy they become. After store in the fridge!
Mash the avocado: While the onions cool, scoop the avocado into a bowl. Add salt, pepper, lemon juice, and chili flakes. Mash to your desired consistency – slightly chunky or smooth.
Toast and top: Toast BFree oat bread until golden. Spread the mashed avocado generously over each slice.
Add pickled onions and serve: Drain however many pickled onions you’d like and pile generously on top of the avocado. Finish with an extra pinch of chili flakes and flaky sea salt if desired.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
