Baked Sweet Potato Wraps with Egg and Avocado

  • 2 BFree Sweet Potato Wraps
  • 2 eggs
  • 1 avocado
  • Handful of basil leaves
  • 1/2 tsp of chilli flakes
  • Capsicum

Preheat oven to 350 degrees F

Place the BFree Sweet Potato Wraps in a deep muffin tin and cut off excess

Crack an egg in to BFree wrap within the muffin tin and place in oven for 10 minutes. After 10 minutes, turn off oven and leave in the oven for a further 5 minutes with the door closed until eggs are set.

Top with chopped up avocado, basil leaves, a sprinkle of chilli flakes and pepper and serve warm.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
