Crispy pan-toasted salami on BFree oat bread with a homemade honey mustard. The salami is rendered in a dry pan first, then the bread is toasted in the leftover fat for incredible depth of flavor. Naturally gluten-free and dairy-free.

Chef’s Note: Toasting the bread in the rendered salami fat takes the sandwich from good to extraordinary – don’t skip this step! Replace regular honey in the honey mustard with spicy honey for an extra kick throughout. The honey mustard keeps in the fridge for up to a week – great as a dip or spread for other meals too.
2 slices BFree oat bread
6 slices Genoa or hard salami
Handful of arugula (optional)
Sliced tomato (optional)
Honey Mustard:

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1/2 teaspoon white wine vinegar

2 teaspoons honey

Salt and pepper to taste

Drizzle of spicy honey (optional, for a kick)
Make the honey mustard: Mix together mayonnaise, Dijon, vinegar, honey, salt and pepper in a small bowl until smooth. Taste and adjust seasoning. For extra heat, add a drizzle of spicy honey. Set aside.
Crisp the salami: Heat a dry skillet over medium heat. Add the salami in a single layer and cook for 1-2 minutes per side until the edges are crispy and the fat has rendered. Remove and set aside.
Toast the bread in the pan: Without wiping the pan, place the BFree oat bread directly into the rendered salami fat. Toast for 1-2 minutes per side until golden and fragrant.
Assemble and serve: Spread the honey mustard generously on both slices of toasted bread. Layer the crispy salami on one side, then top with arugula or sliced tomato if using. Close the sandwich and serve immediately.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
