Health fast food made super easy! These tofu skewers topped with Tzatziki dressing are to die for
Tofu
- 450g Extra Firm Tofu
- 3 fat garlic cloves grated
- 1 heaped tsp smoked paprika
- 1 heaped tsp ground cumin
- 1 heaped tsp ground coriander
- 1 heaped tsp dried mint
- 2 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/4 tsp chilli flakes
- 5bs olive oil
- 1 heaped tsp seas salt
- Good grind fresh black pepper
- Zest and juice of 1 large lemon
Tzatziki
- 250ml Plant-based greek yoghurt
- juice 1/2 lemon
- Half a cucumber coarsely grated
- Small handful of mint leaves
- 4 sprigs fresh dill
- 1/2 garlic clove grated
- salt and pepper
- 1 tbs extra virgin olive oil
To Serve
- 1 packet of BFree Pitta Breads
- 2 babygem lettuce
- Cucumber slices
- Chopped cherry tomatoes
- 1/2 red onion sliced
- Sliced radishes
- Fresh dill
- Mint leaves
- 1 lemon cut inti wedges
In a medium bowl combine all the ingredients for the Tofu, except the Tofu.
Dice the tofu into 1 inch cubes, add them to marinade and stir to combine. Leave covered for a minimum of 30 minutes or overnight.
When you are ready to serve, pre-heat the oven to 180’C. Line a baking tray with parchment.
Using wooden or metal skewers, divide the tofu between 8 skewers and place on the baking tray. Spread any remaining marinade from the bowl over the tofu and place in the preheated oven for about 20 minutes, turning the skewers regularly.
You can do this on a griddle pan, under the grill or on a BBQ.
While the tofu is cooking, place the yoghurt in a bowl with the coarsely grated cucumber, finely grated garlic, lemon juice, olive oil, salt and pepper, finally add the fresh herbs roughly chopped. Stir well to combine, set aside.
Prepare all your salad ingredients on a large platter.
A few minutes before the tofu are ready place pitta into the oven to warm up.
Serve the skewers on a plate alongside the Pita, tzatziki, salad and tuck in.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
