This Caprese Panini recipe serves 2 and is ready within 10 minutes! It’s quick, easy fresh and oh so delicious.
2 BFree Panini Rolls
1 mozzarella ball
2-4 tbs Fresh shop bought basil pesto
2 medium ripe tomatoes
Handful rocket leaves
Salt and pepper to season
Cut the panini rolls in half and spread each side with pesto.
Slice the mozzarella ball and divide between the rolls along with slices of tomatoes.
Top with rocket if using and place in a toasted sandwich maker or in a dry frying pan turning after a few minutes, or until crisp on the outside and the mozzarella is melted.

Amazing GF wraps!We used these for beef quesadillas and they were delicious! I cooked the quesadillas a pan for a few mins on each side and they held their shape when folded. My husband (who isn’t GF) said he wouldn’t have known the difference, which is a big compliment from him because he rarely says that about anything GF!

I just tried the new BFree Oat Loaf and was so pleasantly surprised. It is the first bread I have had in the 10 years of being Celiac that actually taste like real bread. The crust is tender and the chew is very nice. I ate a turkey sandwich without toasting or warming it. This bread is amazing. Then I tried it as toast with butter and was just as happy. This is my new favorite bread. It’s actually my favorite bread because other breads have only been tolerable 😄
