Get ready to feast on these delicious chicken gyros! Serves 4 – 6.
These bad boys are marinated in all the good stuff – think yoghurt, lemon and all the spices. Plus, they’re served in our super authentic gluten free stone-baked pittas!
Top them off with tzatziki, fresh veggies and crumbled feta, and you’ve got a meal that’s chef’s kiss perfection! 🤌
Chicken Marinade
300g plain yoghurt of choice
Juice 1 lemon
50ml extra virgin olive oil
2 garlic cloves crushed
2tsp of ground coriander, ground cumin & smoked paprika
1/2tsp oregano
1/4tsp ground cinnamon
1 tsp dried mint
2 tbs tomato puree
1 tsp sea salt
Freshly ground black pepper
4-6 chicken breasts depending on size preferable organic & high welfare cut into 1–2-inch chunks
To serve
4-6 BFree stone baked Pitta
1 pot shop bought tzatziki or homemade
Cherry tomatoes
Gem lettuce
Red onion slices
Lemon wedges
Olives
Sliced cucumber
Crumbled feta cheese
Fresh dill
First combine all the chicken marinade ingredients and add the chicken, stir to coat the chicken fully. Cover and set aside for a minimum of 30 mins or overnight
When you are ready to cook preheat the grill to medium high, line baking tray.
Skewer up your chicken breast, or just spread onto the lined tray.
Place under the grill turning often until charred and cooked through.
Whilst the chicken is cooking, prepare all the serving suggestions and place onto a board. Preheat the BFree gluten free pitta breads and wrap in foil to keep warm.
When the chicken is ready, serve on a platter with the board of fillings and stuff your pittas as you wish.
