Autumn Apple Pie Topped English Muffins Two Ways

Ingredients

Apples

  • 2 large Bramley Apples peeled and diced
  • 3 heaped tbs coconut sugar/soft brown sugar
  • 1 tsp vanilla bean paste
  • Juice ½ lemon
  • 1 tsp ground cinnamon
  • 1 cinnamon stick

Vanilla and Maple Yogurt

  • ½ cup plain unsweetened almond yogurt or alternative
  • 1 tsp vanilla bean paste
  • 1 tbs maple syrup

Vanilla and Maple Cream Cheese

  • ½ cup cream cheese of choice I like almonds (dairy-free)
  • 1 tsp vanilla bean paste
  • 1 tbs maple syrup

To Serve

  • Extra maple to serve
  • ¼ cup granola of choice or chopped such as pecans or walnuts

Method

Add your peeled and diced apples into a pan, along with the remaining ingredients, heat on medium until the apples are soft but not mushy.

Whilst the apple apples are cooking, combine the ingredients for the vanilla and maple yogurt and cream cheese toppings in two small bowls.

Toast 2 -4 muffins depending on whether you want ½ or a whole muffin each.

Spread half with the cream cheese and top all muffins with a few spoonsful of the apple mixture.

Drizzle the yogurt over the muffins without cream cheese and sprinkle over the crunchy granola or chopped nuts.

Add a final drizzle of maple if you wish.
