1

In a medium bowl combine all the ingredients for the Tofu, except the Tofu.

2

Dice the tofu into 1 inch cubes, add them to marinade and stir to combine. Leave covered for a minimum of 30 minutes or overnight.

3

When you are ready to serve, pre-heat the oven to 180’C. Line a baking tray with parchment.

4

Using wooden or metal skewers, divide the tofu between 8 skewers and place on the baking tray. Spread any remaining marinade from the bowl over the tofu and place in the preheated oven for about 20 minutes, turning the skewers regularly.

5

You can do this on a griddle pan, under the grill or on a BBQ.

6

While the tofu is cooking, place the yoghurt in a bowl with the coarsely grated cucumber, finely grated garlic, lemon juice, olive oil, salt and pepper, finally add the fresh herbs roughly chopped. Stir well to combine, set aside.

7

Prepare all your salad ingredients on a large platter.

8

A few minutes before the tofu are ready place pitta into the oven to warm up.

9

Serve the skewers on a plate alongside the Pita, tzatziki, salad and tuck in.

Your gluten free homestyle sourdough bread is the best I have ever had. Thank you for figuring out what others haven’t . I appreciate the taste, texture, and size of the bread!

Jason

This is the only allergen-free bread I have been able to find. I absolutely love it. Any other gluten-free bread I have found contains egg or soy.

It is pretty much impossible to find foods my son truly enjoys since he developed several food allergies. He was SO excited when he tasted this bread. It is exactly like normal bread! Now he can have sandwiches for lunch again. This will now be a staple at our house.

The low carb protein wraps have changed my life and I’m obsessed. That may be a bit dramatic , but for real, they’re amazing. I have celiac and blood sugar issues so I eat a very high protein, low carb, and gluten free diet. These wraps are delicious and they don’t spike my blood sugar!! I’ve had pizza, fajitas, quesadillas, and peanut butter roll-ups this week using these wraps. They’ve made food exciting again. So, thanks.
